COURTNEY’S BRANDY SAUCE RECIPE FOR YOUR  CHRISTMAS PUDDING
500ml milk
25g flour
25g butter
65g sugar
50ml brandy 
METHOD
Step 1
Melt butter in a saucepan over medium heat. Add flour. Cook, stirring, with a wooden spoon, for 1 to 2 minutes or until mixture bubbles. Gradually stir in warm milk & sugar.
Step 2
Bring to the boil. Reduce heat to medium. Cook, stirring, for 4 to 5 minutes or until mixture thickens. Take off heat and add brandy. You can finish with a little pouring cream, for a richer sauce.
