Zucchinis had a late start this season with all the rain, with rain the Bee’s aren’t out to do their job and cross pollenate the flowers for production. (local honey was down in production as well) We have now had the heat and nature is back working hard.
I am not sure why but we seem to think it needs to be 20cm long and 4cm thick, but like at home or in the restaurant, most of the time we cut them up? A fresh zucchini will be firm and the cut end should not look old. A zucchini can grow up to a meter in length if left on the vine. I pick the size for the meal, Medium for a little bit in a dish at home, or large for a layer in vegetable lasagne or char grilled on the BBQ. The farmers are happy if we take all sizes.
I like to use the female flowers with a small zucchini on the end. For a filling blend a cup of green prawn with ¼ of a brown onion, a spoon of white wine and seasoning. Open the flower and fill with the prawn. Flour, batter and deep-fry for 4 minutes at 180oC. Great with a good mayonnaise.
