The kitchen team at Courtney’s took a trip out to Oberon on Monday to help a friend plant some oak trees, (just a few hundred) these had been impregnated with Black Perigrd spores (Truffles). Also last week the first truffles for the season were harvested from Oberon. The trees we were planting will house the spores for around 4 years in and around the plants roots, before they grow into what we know as the Perigord black truffle.
Truffle is believed to be taken from the Latin language and means “tuber” or swelling, lump”. They are a mushroom or fungus that grow underground. The black diamond of the kitchen. The aroma is very pungent and we add flavour to eggs, risotto and butter just by storing the truffles in the same container for a few days. Shaved fresh on to a dish just before serving add an experience that can’t be replicated. Blend them into butter and use in your scrambled eggs on Sunday!! Fresh truffles can cost up to $2500 per kg, but you only need a little piece to experience them.
