Feeling a bit low with all this rain and winter weather. You just need to start the day with a glass of fresh squeezed orange juice! Navel Oranges are in season now, we have already began picking them off our trees at home. I know they are sweet and ready at the first sign that the possums are interested in them. Now it is a race to get them before they do.
Navels are one of the biggest orange varieties and available during the winter from June - August. They are sweet and juicy, rich in orange colour, seedless and easy to peel.
They make a great sticky pudding too Prick 3 oranges with a fork then boil 4 times in water discarding water each boil and start with fresh water, this takes away the strong peel flavour. Bring Oranges, 375ml of water and 375g of sugar to the boil. Reduce by half. They will begin to look like glace oranges. In a blender, Cream 90g butter & 275g brown sugar, then add 3 eggs one at a time. Add 275g SR flour and 1tsp bi-carb. Then blend in Oranges and liquid. Place in a greased and lined cake tin. Bake 180°C for 30-45 min. Serve warm with some double cream.
