Watermelon is the most common of all types of Melon. A Summer Fruit that is about 90% water. That could explain why it is so refreshing.
Most of our watermelons are grown up north in Darwin where they can grow all year round, but our local ones are here now. It takes a good part of summer to grow & ripen them here. I brought a 4 kg seedless watermelon home last week and it disappeared. Great in the lunch box for the kids or with ice cream for dessert.
I recently had water melon wrapped in prosciutto and then quickly pan fried to crisp the salty prosciutto with a nice sweet cool centre. It was nice, but not as good as a cold piece of melon on a hot day.
The only other way to have melon that comes close to a la natural is Sorbet. Take 500ml of water with 500g of sugar. Blend this with 750g of watermelon and the juice of 2 lemons. Place it into an ice cream machine to churn or put in a bowl in the freezer and stir with a fork every 30 minutes until it is frozen.
