Royal Gala Apples

Now is the time to grab an apple. Not just any apple, Local Royal Gala are being picked now. A medium sized apple, with the skin being a red blush with yellow through to orange stripes. They have sweet flesh and originated in NZ from a Kids Orange Red & Golden Delicious, they were introduced into Australia in 1980. Make sure they are this seasons if you are buying them from a super market!!

I made this great easy recipe for apples last week, peel & slice 9 small to medium Royal Gala apples and mix with the zest & juice of one lemon. Then in another bowl mix 3 eggs, 1 cup of sugar, 100g of butter melted, 150g plain flour, 2tsp of bi-carb, 150 g pecan nuts, 150 g dried figs chopped, pinch of cinnamon, pinch of nutmeg a little vanilla. Then mix the batter with the apples and place into a cake tin. Smooth the top with the back of a spoon.  Bake at 170oC for 1hr & 20 minutes. Cover the top half way if it browns too much.
