Pine Mushrooms

As the weather changes, with the rain the past few weeks, the cool air in the morning and some nice sunny days . The climate for mushrooms in the pine forests has been good for wild “Pine Mushrooms”. Also known as Saffron Milk Caps .If you are in the Mountains or are heading across them towards Bathurst it is a good time to stop and have a wander through the pine forests or even under pine trees in the parks. I have even collected pine mushrooms from Londonderry at the foot of the mountains. Pine Mushrooms grow in the pine needles at the base of the tree.

They are a deep orange colour, a smooth top and what look like gills underneath. Not all  Mushrooms  are eatable and can be very poisonous. So make sure you know what they look like before you go harvesting. Keep an eye out for slippery jacks as well another fine treat.

Pine mushrooms are a meaty mushroom and can grow quite large around 15cm in diameter. They are nice tossed in some extra virgin olive oil, garlic & a dash of balsamic vinegar. Serve with a grill piece of sword fish or a thick steak.
